Mushroom Soup

This is one of my favorites and has proven to be a favorite in my Enlightened Nutrition group as well!

WHAT YOU NEED:
1 box veggie broth
12 oz canned coconut milk
4 cups sliced portobello mushrooms
3 cups chopped boc choy
2 diced potatoes
Himalayan Salt to taste
Black Pepper to taste
1/4 cup Liquid aminos
2 tbsp Olive oil
1 tbsp Turmeric
1 tbsp fresh ginger
2 shredded chicken breasts (bake at 350 until cooked through, shred with a fork) OR 1-2 cans drained and rinsed chickpeas

Add all ingredients to a pot, boil... Simmer... Done. I had it on the stove top for a good 35-45 minutes.
